Salad season is upon us. But that doesn't mean you have to stick to leafy greens - just add them to your favorite foods and call it "salad."
Here are my top three, inspired by a few of my faves: nachos, pizza and burgers. Sophisticated palette, I know.
The Nacho Salad
There's always that one person that adds way too many toppings to their tortilla or taco shell so that, in the end, it just ends up being a giant salad *raises hand*. A fun twist on the taco salad, this is as good an excuse as any to eat nachos for dinner. Layer chips, chopped veggies, beans, chicken or fish, and plenty of cheese on a parchment covered sheet pan. Bake until cheese is melted and veggies are cooked.
Pile a handful of leafy greens on top to quell any doubts that nachos qualify as an adult dinner. Drizzle with Sriracha and DEVOUR.
The Pizza Salad
I could eat pizza for dinner every night of the week and never get sick of it. Okay, slight exaggeration. But for real I probably eat pizza for dinner at least once a week. And thanks to the pile-enough-veggies-on-top-and-call-it-a-salad school of thought, it's perfectly acceptable.
For the weeknight express version, try a baguette pizza.
The Baguette Burger Salad
Another dinner on regular rotation for me is a good ol' burger. Hey, someone in France has to keep those American stereotypes alive and well.
I actually like to make two "mini" burgers. For a Frenchified hamburger, start with la base: steak haché and a piece of baguette. Then add comté, caramelized onions, tomato and a handful of lettuce. Don't forget the Dijon! So much flavor. Another thing I love about this version? It uses up that last, lonely little bit of baguette that always seems to be left...
