The whole idea behind a yogurt cake is that it's super easy to make and modify. The base recipe calls for simple pantry ingredients (flour, eggs, yogurt), but after that you can add fruit, chocolate, nuts, or all of the above. Then, you can even use the plastic cup the yogurt came in to measure out the ingredients. In France, the standard individual yogurt pot is 125 mL. I happen to buy my yogurt in bulk so I end up measuring out the ingredients normally, mais bon.
Gâteau au Yaourt et au Chocolat
*Makes 6 generous servings*
- 125 g. yogurt nature (I used fromage blanc)
- 200 g. sugar
- 2 eggs
- 250 g. flour
- 30 g. cocoa powder
- 100 g. dark chocolate, broken into small pieces
- 12 cL vegetable oil
- 1 cuillère à café vanilla extract
- 1 c.c. de levure chimique (baking powder)
- pinch of salt
- cinnamon, to taste
Next, preheat the oven to 180°C (350°F). Mix the yogurt, sugar, oil, vanilla and eggs in a large bowl. Gradually stir in the dry ingredients (flour, cocoa powder, levure, salt and cinnamon) until combined. Add chocolate chips. Pour into a small baking dish. The batter should be shiny and smooth, similar to brownies.
Bake for about 45 minutes. I tend to under-bake it on purpose for a fudgier result.
