Morning Ritual: Muesli (Overnight Oats)

Does anyone else go to bed already excited for breakfast the next morning? No? Just me? If you think I'm crazy or have no idea what I'm talking about then you probably need more muesli in your life. 

Ahh muesli. I remember my Dad raving about it when our family used to live in Switzerland (turns out it's a Swiss-German thing). Every time we'd go on vacation, the hotel breakfast spread always seemed to include oats, plain yogurt, fruit, and milk. As a kid, plain oats mixed with dried fruit and nuts didn't seem quite as appealing as chocolaty Nesquik (why is this cereal not in the U.S.?) 

Then on a trip to Barcelona last spring, I discovered just how delicious cold oats can be (thanks Daniel and Anne) and declared it my new favorite breakfast.

Oatmeal's summer counterpart and healthier than granola, muesli is so versatile. There's literally a million ways to make it but I usually like to mix oats, a dollop of plain yogurt or fromage blanc, a spoonful of jam, a splash of almond milk, a dash of cinnamon and about as much chopped fruit as I can fit in the bowl ;) 

Not feeling a bowl of raw oats for breakfast? Try toasted muesli or go the overnight oats route. Mix everything together in a glass jar the night before and pop in the fridge (I like to layer the oats on top of the yogurt so they soften without getting too soggy). Bonus: breakfast is ready to go when you wake up!

Best-Ever Bircher Muesli

Ingredients

1/2 c. // 45 g. oats

1/2 c. // 125 g. fromage blanc or plain yogurt

1 tsp. honey or jam

1 tsp. cinnamon

1 tsp. vanilla extract

2 T. almonds, finely chopped

1 c. fruit, finely chopped

3/4 c. almond milk

Instructions: Combine chopped fruit, yogurt, honey and vanilla in a large cereal bowl (or jar if you're making it for the next day). Stir in oats and almonds. Sprinkle with cinnamon and top with almond milk. 

I'm such a creature of habit (especially when it comes to breakfast) that I couldn't even shake my muesli habit when I went home for the holidays. The photo above doesn't do it justice, but the banana-chocolate-almond combo goes great with a cup of coffee.
